Mojito

Mint, lime, and rum, muddled together until the glass smells like a Havana garden after rain — the Mojito is the sound of ice cracking on a hot afternoon. It survives every trend because it was never trying to impress anyone in the first place.

1. Gently muddle the mint leaves with the sugar and lime juice at the bottom of a glass — bruise, do not shred, the mint.
2. Fill the glass with crushed ice.
3. Pour in the white rum.
4. Top with soda water and stir once.
5. Garnish with a mint sprig.
